I wanted to make a pit fighter conversion But not sure where to start

Check out this tutorial here (it's about halfway down the page)
http://www.warseer.com/forums/showthread.php?250907-Ogre-Maneaters/page47I've just been using it myself and I'm pretty happy with the results. Just make sure you check out some tips and tricks when using greenstuff if you've never done it before.

That is excellent, thank you.
I will start off practicing on the armour and straps before attempting that

Chuck Norris was the fourth wise man and gave Jesus his favorite gift, a beard. The other wise men were so hacked off, they got Chuck Norris removed from the bible. Mysteriously, they all later died of Roundhouse kick related injuries.

That's a pretty decent tutorial, though I would say it may be easier to remove the legs entirely, add some wire armatures and sculpt bare legs from scratch. Either way you're going to need to be doing a lot of sculpting to get a good look.
I suggest removing the legs only because by the time you've cut away at all the fabric shapes and left a suitable core to sculpt off of you're not going to have much left which couldn't be achieved with some twisted wire.
Regardless, the key to making it look good is going to be in research; you'll probably want a good selection of reference images to work off of whilst sculpting, and a reasonable grasp of where leg muscles go, how they work, and how they interact with one another.
