I couldn't decide where to put this so I apologize if its in the wrong place. Im building my slaughtermaster and I have to build a model to how its actually equipped or my OCD will eat me alive and im not sure how I want to equip him. I was going to go with great weapon since I3 is still very much laughable and it really does not matter. Is this the ideal for a butcher/slaughtermaster?

Great weapon will lose you an ironfist/magical shield option. Another popular build is the fencer's blade, which is a paired weapon.
If it really bothers your OCD that much, i'd recommend magnetizing different arm and weapon options for your SMs. This will allow greater flexibility in list building. There are many guides on the intarwebs about how to do this.

I usually give my SM the Armor of Destiny, Ironfist, CoC, and whatever magic weapon I can afford with whats left. Sometimes a Fire Ward too.

Might not be allowed by your OCD, but try testing him armless in a few games, see what setup you prefer? It does depend on things like meta and so forth. Magnetising is always helpful mind.
Ogres - because who honestly likes 2 wound heroes?

Seconded! Just really hard to hit in combat and very resilient with toughness 5 and 5 wounds. I've actually managed to completely strip all the magic levels off a death daemon prince of nurgle that tried to fly in and tie up my unit of iron guts and spam purple sun through my hoard.

I give my SM a dispel scroll, a gw and then keep him in 2nd row. Maybe a 4++ if I go character-light

I use a fairly typical build on my Slaughtermaster generally.
Blobby Flay (lvl 4 slaughtermaster) : Fencers blades (think fillet knives) , Glittering Scales (this can be cooking medals or just lots and lots of knives) , and something else depending on the list (maybe greedyfist maybe dispell scroll or something else).
I like to build defensive and lean on ogres natural strength for offensiveness but I can't make a ward save to ..well...save my life. So I like making the enemy hit on fives at best by having a higher WS and then giving them a -1 to hit.
another one i like is ...
Ali Blubba (lvl 3 Slaughtermaster) : Arabian Carpet and Hell Heart
