With all the multi-wound models, unit champs, characters, it can be tough for an Ogre player to keep track of all those wounds. Just how are we suppose to cleanly and easily track wounds on a deathstar, what with 3 characters, unit wound and champion. Dice? Nay I say, nay.
Warmachine and Hordes has it right. Marking wounds on a piece of paper with a dry erase marker is the way works. So I created a PDF that I could print up and laminate to keep track of my Ogres wounds.
I printed mine on some parchment, flicked watered down blood red and a mix of blood red and scorched brown to make some fun blood patterns, burned the edges slightly and "laminated it" with a few strips of clear packing tape. Works like a charm!

Picked it up on the way home from work. Turned out a little larger than I expected, but I figure this way my opponent can see it from across the table.
$4.91 from Staples for heavy card stock and lamenating. (I had to pay 5.00 Rush fee to have it done tonight)I'll be using it at a tourney tomorrow.

what do you guys do when multiple wounds are inflicted, but they obviously are split between multiple models, i.e. cannon shots or mortar shots?

Multiple wounds like that can't "overkill".
For instance, a cannon hits an Ogre unit that already has two wounds on it. The cannon hits, and wounds. It deals 5 wounds. These wounds are all applied to a single model (you always apply wounds to a previously-wounded rank-and-file model [non-Character/Champion] before allocating another), which already has 2 wounds on it. The 1 wound is applied and the 4 extra wounds are "lost".
With templates that do multiple wounds, any "overflow" wounds are also lost. For instance, a Maw hit does d6 wounds per model. If you roll a 4, 5, or 6 on the number of wounds, the overflow is lost...it doesn't apply to the unit. However, multiple single/double wounds do apply across the unit. You have to remove whole models first, before dealing with the single wounds...so go through any results of 3+ wounds and remove a full model for them, before aggregating all the other "loose" wounds together.
Also, back to cannons a moment: You do damage to each model hit by the cannon in turn. If any of them fail to die, the cannon shot is "stopped" and the bounce ends there, immediately. This is a big deal with multiple wound models, because it means a cannon can be stopped by either a 1 to wound, or a roll of 1 or 2 on the number of wounds.

So if I have a unit of 6 bulls with 2 ranks and currently have 2 wounds. Enemy shoots a cannon and inflicts one wound on the first model. Because I apply this to a single model first and he has 2 wounds inflicted already, I would remove that model and he would roll for the second rank, right?

Yes, you have to apply wounds to models that already have wounds. In blocks of multi-wound models, loose wounds sort of "float around" waiting to be applied to a model. This is to keep you from saying "Oh, this guy has 2 wounds, and this guy has 2 wounds, and this guy has 1 wound, and this guy has 1 wound" and not have removed any models, despite having taken 6 wounds.
So the first guy (poor sucker) would get shunted to the front with 1 wound remaining, and then the next rank would have 3.

So if a mortar wounds three ogres, the wounds would float together and one ogre would be removed? I always let my opponent decide how to handle this sort of situation, generally they have me track separately. Other wounds from combat or shooting, I apply to the ogre with the fewest remaining wounds first. Can someone provide a rulebook reference for the "floating wounds" rule?

(This thread is getting increasingly off-topic for the sub-forum it's in, and that's kind of my fault, and I apologize, but for the sake of finishing what I've started, I'll answer this last bit.)
BRB, page 45. Subsections: "Models with more than one wound", and "Multi-Wound Models and Multi-Wound Weapons" are the references you need for what I've been stating.
Specifically:
"You are not allowed to spread the wounds throughout the unit to avoid suffering casualties ... [D]ivide the number of wounds caused by the Wounds characteristic of the models in the target unit, removing this number of models ... Any leftover wounds that were not enough to remove a model are carried over and will be added to the wounds inflicted by any subsequent attack."
Re: Templates and things that cause multiple wounds per-model:
"If a unit of creatures with more than 1 Wound is hit by a weapon that causes multiple wounds, determine how many wounds are caused on each model individually (remember that each model cannot suffer more wounds than it has on its profile). Add up all wounds caused on the unit and then remove the appropriate number of models, noting any spare wounds on the unit."
So, yes, a Mortar causes three wounds and you just remove one whole Ogre. The only time you track wounds seperately is Characters and Champions, who have the Look Out, Sir! rule to avoid them in the first place.

wow that was an interesting read. Got rather heated at times as well. One question I never did see covered among all the back and forth I was hoping you could answer. Say you have two models left the standard and champ at this point and the standard has 2 wounds left. Shot with cannon, they make the look out sir roll and it does 3 wounds. THe Standard Bearer obviously dies.. but does the one wound roll over onto the champ because as mentioned in that thread. The Champ is really the only one who has a seperate wound pool from the group right?

Just 2 guys left and no look out sir roll there sadly. So champ takes it in the gut. need 5 RnF or 3 RnF for a LOS roll with a look out gnoblar so the unit would have to have at least 2 other ogres in it with the STD bearer to allow a LOS roll for the champ or other char.

I'd avoid using the term "STD bearer".
