What type of empire army are you expecting?
Empire can be very tricky and it all depends if you are facing a shooty empire or a cavalry empire, or an all infantry empire, or a mix of these.
On a general basis, the list seems fine, though.
One thing: BoH is alresy an extra hand weapon, so you don't need to get an extra hand weapon.

OK, thanks. The guy plays a 'all in one' army. That means some cavalry, some infantery and some shooting.
Daan_B, I played often against empire. I like your army selection. The tyrant seems to be made to take the tenderiser. What you want to do is field the tyrant and once in combat, challenge everytime because those extra wound you will cause are CR points right there. I would give him the wyrdstone and the fistful of laurel. No heavy armour, no brace of handguns. Put him in a unit and keep a butcher close by. You want to play trollgut or tooth cracker on him and his unit. I would get rid of the bruiser and field in 3 bull with clubs and 24 gnoblars. The slavegiant can be good but with empire shooting, they get a +1 to hit because he's a big creature...hmmm I would put 2 gorgers and if both come out, try keeping them together. The rest is very good. Since you will be out numbered by empire, use the denied flank setup and place belchers where he can flank you. Let us know how it went.

Totally agree with Genghis Khan: play a denyflank tactic (I do), and ditch the giant for a second gorger.
With the other points get a 4th LB and divide them in 2 units of 2: this way they are more versatile and flexible.
I am not too sure about the 3 IG unit: it seems too fragile, and, against cavalry, which is expected, it won't be as effective as it should be.
I would either get a 4th IG, with standard (so they can deal 12 st6 attacks, instead of only 9, and start with +1 CR).
I would ditch the scars on the tyrant: empire is not likely to flee and if the opponent is an avarege player, he will keep the general (with Ld9) near weak units, to keep them sturdy.
A luck gnoblar is better off with a wardsave: get a wyrdestone neckl.
Have you thought about making your bruiser a BSB? I usually don't take bruiser BSB, since I never take the 4th character, but since you have him, you might as well use him.
