Okay, so yesterday I was playing against a Dwarf friend using the new book. My Gorger turned up right behind his Thunderer unit and between two Stone Throwers, ready for chomping. His turn, his 24" range Organ Gun blasted my Gorger with 8 S5 hits, with a re-roll of the Artillery dice. How can I deal with this?

count yourself lucky this unit slayer only took one gorger instead of 200+ pts of irongut or bull unit. try and get a charge in vs the organ gun crew with some sabretusks maybe or try and fry em with bonecruncher spell or make em flee with braingobbler (a long shot) other than that hoping for misfires or bringing him on out of line of sight of the organ gun.

Don't Organ Guns require line of sight? Or was that changed in the new Dwarf rules?
If it requires line of sight, it should be easy enough to keep him from being shot at by the Organ Gun - don't forget you can still move the Gorger when you bring him on, you just can't charge

still need LOS but you can pivot a warmachine and it doesnt count as moving so can still fire.

360 degree shooting arc, I believe. I guess you could try and hide it behind another warmachine?

Actually, the gorgers are the most annoying beast around for 75pts. Word of advice, your opponent will do everything to stop the gorger so putting a gorger right in line of fire can be risky. I would suggest to put 2 gorgers and make them come out and put both together. Ever heard the saying : together we stand, devided we fall ? That was one of Napoleon's best combat tactic, have 2-3 units to smash into 1 to break the center or in the case of the gorgers, if one dies, at least the other has a figthing chance.

Like Bork da basher said at least for one round they won't be shooting at your Ogres, and they do work well in pairs. Try to use terrain as much as possible to shield you. I belive the still need line of sight. Lastly move them as close as possible to an opposing unit, then get them into combat as soon as possible.
